Creamy Balsamic Coleslaw

Ingredients

  • 10 stalks Celery chopped
  • 1 Yellow Bell Pepper diced
  • 5 medium Carrots shredded
  • 1/2 head Red Cabbage shredded
  • 3 Scallions Sliced

Dressing

  • 1/4 cup Tahini Softened
  • 1/4 cup Olive Oil
  • 3 Tbsp Balsamic Vinegar
  • 1/2 tsp Sea Salt
  • 1/4 tsp Ground Garlic
  • 1 Tbsp Fresh Basil julienne

Instructions

  • Combine the first 5 ingredients in a large bowl and set aside.
  • In a small bowl, whisk the dressing ingredients together until smooth.
  • Pour dressing over the vegetables and stir to combine.
  • Serve immediately or chill in the fridge until ready to serve.

Notes

To save time, shred the carrots and cabbage in a food processor with the grate insert.
