Dairy-Free Eggnog

Ingredients

  • 4 Eggs
  • 1/2 cup Full Fat Coconut Milk
  • 1 tsp Whole Cloves
  • 1 pinch Fine Sea Salt
  • 1/4 cup Maple Syrup
  • 3/4 tsp Vanilla Extract
  • 1/4 tsp Fresh Grated Nutmeg

Party Drink

  • 4 oz Eggnog
  • 1 oz Rum (leave this out for the kiddos
  • 2 oz Sparkling Water

Instructions

  • In a medium bowl, whisk together eggs and coconut sugar.
  • Transfer egg and sugar mixture to a large saucepan and turn heat to medium-low.
  • While whisking, slowly pour in the coconut milk. Add in a pinch of salt.
  • Continue whisking for 10-15 minutes, or until the mixture has thickened and coats the back of a spoon.
  • Remove from heat and add in the maple syrup, and vanilla extract. Let cool for 30 - 45 minutes.
  • Pour the eggnog through a fine mesh strainer into a large bowl. Carefully mix in the fresh nutmeg.
  • Cover the surface with plastic wrap and chill in the fridge for at least 2 hours, or until cold.
  • To make the party drink, add eggnog, rum (adults only!) and sparkling water to a glass and stir to combine. Enjoy!

Notes

Makes about 5 cups of the eggnog base.
I'm a little bit of a sissy, but feel free to add a bit more rum to your liking.
