In a medium bowl, whisk together eggs and coconut sugar.
Transfer egg and sugar mixture to a large saucepan and turn heat to medium-low.
While whisking, slowly pour in the coconut milk. Add in a pinch of salt.
Continue whisking for 10-15 minutes, or until the mixture has thickened and coats the back of a spoon.
Remove from heat and add in the maple syrup, and vanilla extract. Let cool for 30 - 45 minutes.
Pour the eggnog through a fine mesh strainer into a large bowl. Carefully mix in the fresh nutmeg.
Cover the surface with plastic wrap and chill in the fridge for at least 2 hours, or until cold.
To make the party drink, add eggnog, rum (adults only!) and sparkling water to a glass and stir to combine. Enjoy!
